This delightfully light soup features two of my favorite ingredients: ginger and parsley. Ginger is soothing to the tummy and a natural anti-inflammatory that helps our bodies relax. Parsley is a powerhouse detoxer that also contains Vitamin C which is great for immune support.
The homemade meatballs are filling and add the “comfort food” element that so many of us crave during the winter months. You will only use half of what you make for this recipe. The leftovers are great with your favorite marinara, as an appetizer or a quick snack to go.
