You might find it corny, but I love Valentine’s Day.
A lot of people say it’s not a “real” holiday. And I suppose that might be true, but to me, Valentine’s Day is a little spark of hope and happiness in an otherwise dreary time of year. The joy and the festivities of the winter holidays have long since passed. Everyone is now buckled down with their resolutions; noses to the proverbial grindstone.
And then comes Valentine’s Day. Bright pinks and reds and happy little hearts are everywhere. People’s spirits start to perk up and suddenly they want to give again- a card, a little trinket of affection, giant heart shaped boxes of sugar and preservatives…
Don’t get me wrong, I love chocolate. In fact, I have quite a sweet tooth. Sometimes, a good piece of dark chocolate is the only thing that can solve the problem (we’ve all had those days!). But, I’ve learned over the years how to temper my sweet tooth with healthy alternatives.
I want to share my favorites with you today. All are simple to make AND share with your loved ones, coworkers and neighbors this Valentine’s Day. Such a small token of appreciation might be just the spark they need!
Chickpea Brownies with Sunflower Butter and Chocolate are the perfect treat when you are wanting something ooey, gooey, melt in your mouth. They are nut free AND grain free.
Oatmeal Trail Cookies with Raisins and Chocolate are wonderfully chewy and delightfully sweet from the chocolate and raisin combination. Because they are made from hardy flours and oats, they are also filling. You can make them bite size for an on the go snack or larger for a breakfast cookie.
Chocolate Covered Popcorn with Pecans and Walnuts is quite possibly my favorite treat of all! Crunchy, sweet and nutty, it’s perfect for movie night or an afternoon snack at the office.
